High School

My 15 year class reunion was a few weeks ago....
Although I didn't go, it was a fun time for me to think back about those fun years I spent at CHS.

I really loved growing up in a small town.
I love that Justin and I grew up in the same small town.
The fall always reminds me of the many football games, bon fires and cross country meets of my youth.
I thought I would share with you some of the cute photos from my senior year.
Oh, how I wish I could have the wisdom then that I have not gained easily.

Isaac's final soccer game was last night.
He has enjoyed it so much. So have we.....
He's learned a lot this year and playing with all of his buddies has been a bonus.
We've even convinced Ethan to play on the Spring Team.
Next up, we're moving on to Cub Scouts.

What's For Dinner?

My Great Grandmother's Sweedish Meatballs with Egg Noodles and Garlic Snap Peas

This is one for our kid's favorite meals. The very smell of it through our house just reminds me of my childhood days spent at my grandmother Ana Belle Arthur's home.

2 lb. lean ground beef
3T Zesty Italian Dressing
1 Egg
1/2 C Italian Breadcrumbs
1 t dried minced onion
Dash of salt, pepper and italian seasonings

Mix together and form desired size of meatball. Important-brown in skillet for 5-7 minutes before placing them in baking dish. This get most of the grease out.
Place in baking dish. Pour 1 large can of Cream of Mushroom Soup over the top. Bake for 35-40 minutes on 400 degrees.
Serve over boiled egg noodles, using the excess cream of mushroom as gravy.

Fall Colors and Randoms

I have been working in Park City this week a little bit.
I thought a lot yesterday about a little trip I took out here to see Justin in the Fall of 1999 just before our wedding day.
As we drove to Park City, we talked about our future dreams and goals as a couple.
We talked about what we wanted our traditions to be and what holidays would feel like at our house. We talked about how many kids we wanted to have.
He said two. I said more. As you see, we reached a perfect compromise.
Our life together has been such a blessing to me.
As I drove to Park City at 6 a.m. yesterday morning I thought about how we have managed to reach many of those goals and create that wonderful feeling for our children.
On the way down the canyon last night, kept thinking about New York.
I hope we get to see the beautiful colors, Central Park in the Fall.
Everyone talks about the beauty of fall in the East.
What about the beauty right here?
I know I take it for granted so much that I live amongst this amazing scenery.
It's right out my front door.
The colors in Provo Canyon are unbelievable....maybe you should take a little drive this weekend and see for yourself.
I love fall in Utah.
Still, I am excited to see fall in New York.
Just a few more days until we jet set on our romantic getaway!
I can't Wait!

Thursday's Thought

If you screw up, you can always say you're sorry....even if you are six and you say naughty things to your babysitter.
This is further proof that I am a mean mom.

A Chocolate Apology....

I'm a mom, I should know this stuff...
It's REALLY not my fault.
Who can resist her sweet, slobbery summons (in the form of puckered lips) for a little treat?
I'll be sure to ask next time.
P.S. Can she drink Pepsi? Is that off limits too?

Funny Boy Issac

It is my philosophy that every family should have a little Isaac in it.
He is such a cracker!
I say: "Isaac, if you roll your eyes at me one more time you're going to find yourself grounded."
He replies: "MOM, I am NOT rolling my eyes. I am just looking up at my brain."
Yeah Right!

Something I Love...

It makes me really happy to have the opportunity to scan old photos of family members.
It's part of my story, where I came from.
I get a special feeling looking into my parents eyes when they were children. It makes me feel full of love.
Someday I hope to have the opportunity to do genealogy and temple work for all the fine people in my life that are gone.

Remembering Brittan

Someone in our house quietly misses her most of all....

I mowed the lawn yesterday for the first time since she made her heavenly departure from us.
It use to annoy me so much that she would constantly bring her ball to me and drop it at my side and beg for me to play with her the entire time I was trying to get my work done.
Who would ever think that something that could annoy me so much would be something I would long for so much......

What's For Dinner?

Simple Salmon with Garden Fresh Salsa

Fillet Salmon ( I like the Fresh Salmon from Costco best of all)
Coat with a little virgin olive oil (I use the spray kind)
Dash of fresh sea salt
Broil in oven for approximately 8-12 minutes

Salsa: I seriously don't measure anything, I just put it all in!
Lots of Tomatoes, Diced (extra red ones from the garden work best)
Fresh Squeezed Juice from 3 Limes
1 Bunch Chopped Cilantro
1 Minced Red onion
2 Minced Jalapeno Peppers
Dash of Salt & Pepper
3 T Sugar

Oven Roasted Red Potatoes tossed with Rosemary
Fresh Green Beans with Bacon, Vinegar and Minced Onions

Best part about this meal is you can make fish tacos on day 2 YUM!
