Flashback Friday




To Wonderful Summertime Childhood Memories....

I have such vivid thoughts of my childhood in the summer.
Spending endless days in my great grandparent's garden eating strawberries until my stomach hurt. Playing with friends, and riding my pink Huffy bike. My mom would fill the stock tank (that's "hillbilly" for swimming pool, it was actually a horse troff) with fresh water for us to play and let us drink Bubble Up until our heart's content. My parents loved bon fires and we had one nearly every Friday night growing up. Camping at Table Rock Lake, and visiting Branson was one of our favorite things to do. I loved going to the Lake of the Ozarks to see grandparents, aunts, uncles, & cousins. My grandparents owned a resort there called The Fern Glen. We would play shuffle board, make homemade french fries for the patrons every day and even play hide and seek in the lake water under the docks at night.


Although my children's memories may be different than mine, I hope that I can give them these kind of experiences to look back on and recall with a smile.

Recipe Of The Week & A Quote


"Mom....I am NOT eating that, it looks like a big poop ball" ~Abby Hill, Age 4

It, in fact is not a big ball of poo....It is, however:

YUMMY Cafe Rio Pork
The Secret is out (or maybe I'm just the last one to know)
1 Boneless Pork Roast
1 C Brown Sugar
1 Coke
1 Container Salsa

Cook in a crock pot for 6-8 hours until the meat just falls apart.
Shred the pork and place back in the crock pot and cook in the juices for another hour.

Makes the best shredded, sweet pork tacos ever!

Hiking to Timp Cave....

This is something we have always wanted to do....
Justin and I took the day off today to be with the kids and woke up and decided to make the most of our day together and hit the trail and climb to Timp Cave. It was wonderful, and exciting, and long and exhausting. Having climbed to the top of Timp in 2001, I expected this to be a piece of cake! We weren't sure about taking Abby and they don't allow strollers on the trail or backpacks in the cave. She, along with her energetic brothers made it to the top without so much as a complaint! It was a wonderful experience and definitely something you should do if you haven't! Sometimes I can't believe how many lifetime Utahans haven't taken advantage of some of the great things just out their own front door.

It's Almost Someone's Birfday

And we believe in celebrating for an entire week before....
Thus the new ride, helmet, PJ's and pink fluffy slippers. Apparently a bike was a little too much work for a princess, so we came home with this self-powered Hello Kitty bike. The slippers are a necessity in every little girl's wardrobe I've been informed.
I for one find them to be fabulous!

Recipe of the Week


Mint Chip Ice Cream Cake
Smash 1 package of Oreos, reserving 1/2 C
(This is the minions favorite part)
Mix with 1/2 cup melted butter & press onto bottom of cake pan
Spread 1 carton slightly thawed Mint Chip Ice Cream
Top with slight layer of fudge or chocolate syrup
Spread 1 container cool whip on top
Sprinkle remaining 1/2 C crushed Oreos on top
Chill in freezer & Serve

Home Of The Free Because Of The Brave


When my friend's son was killed in Afghanistan in March I began to ponder all the many things we take for granted as Americans....I attended his funeral and think that every American should have the experience of attending a fallen soldier's memorial in their life. I truly felt honor, and patriotism and gratitude swell.

During the past few months I have thought about how I could get involved and express my love and thankfulness to Nigel's family. Yesterday we held a Vintage Car Show at the community I work for to raise money for his memorial scholarship. It was a great day!
We were able to raise $1500 and have a great time!
We're nearing our goal of $30,000!

I'm Only Famous For One Thing....

Well, besides talking a lot...and relating well to people in their 80's....

BAKED BEANS!!!!
I'm only asked to make them everywhere I go...
I can't take the credit for the recipe though...
it came from a good Missouri friend of ours.

And thanks R for my "flirty" apron, isn't it darling?


Yes, you must do this...no matter how badly it hurts.
And it will make your hands and hair stink for days.


Here is the secret ingredient:


And here is the masterpiece, I made a couple of pans of these puppies last weekend:


Ruben Vega's Baked Beans

2 Cans Pork & Beans
1 T Butter
1/2 C Diced Green Pepper
1/2 C Diced Onion
1/2 C Liquid Smoke
1 C Brown Sugar
1/4 C Mustard
1/2 C Ketchup

Saute pepper and onion in butter for about 5 minutes. Add the liquid smoke and stir. Then add in the brown sugar and keep stirring until brown and bubbly. Pour mixture into pan of beans. Add mustard and ketchup and stir. Add some crumbled bacon for extra, extra goodness. I usually let them sit overnight for best flavor and bake the next day for about 45 minutes at 350 degrees.
