Recipe of the Week


Pumpkin Bars

4 Eggs
1 2/3 C Sugar
1 C Vegetable Oil
1-15 Ounce Can Pumpkin
2 C Sifted Flour
2 t Baking Powder
2 t Cinnamon
1 t Salt
1 t Baking Soda

Preheat oven to 350 degrees. Using an electric mixer combine: eggs, sugar, oil & pumpkin until light and fluffy. In a separate bowl, stir together all dry ingredients. Add the dry ingredients to the pumpkin mixture and mix until smooth. Spread batter on 13x10 baking sheet (make sure to spread evenly). Bake 30 minutes and let cool. Spread cream cheese icing on top.

Cream Cheese Icing

8 Ounces Cream Cheese
1/2 C Butter
2 C Powdered Sugar
1 t Vanilla

In a mixing bowl combine cream cheese & butter until blended. Add powdered sugar and vanilla. Spread on cooled pumpkin bars.

I am a bad wife and mom and usually double the icing.
It may be bad for the body,
but it's great for the soul!

September Heat Wave.....

Dear Mother Nature,
Thank you for the endless Summer.
Thank you for the extra days swimming, laying in the sun, and for the opportunity to devour another box of otter pops.

Flashback Friday

Fall always brings a certain nostalgia back to me. Just the nip in the air, the smell of leaves falling and the changing colors make me think about all the wonderful seasons I've experienced running track & cross country. I received a phone call yesterday from the BYU track coach. I have been approved to become a track official for BYU! I'll be attending a school in November and ready to roll my sleeves up and help out! Especially since it seems that I spend more time in physical therapy these days than anywhere else!

Run Like The Wind Bullseye


The boys got to run in the BYU Autumn Classic today!
It was their first ever cross country meet!
You can imagine I was pretty stoked to see our little guys get out there and run like the wind!
