The Best Thing To Ever Touch my Taste Buds
Raspberry Pecan Torte
6 egg whites
1 pint whipping cream
1 pkg Danish raspberry dessert
2 tsp baking powder
2 T powdered sugar
2 C water
2 tsp vanilla
1 tsp vanilla
1 pkg frozen raspberries with sugar
2 C sugar
1 C chopped pecans
1 C soda crackers
Separate egg whites while cold. Beat at room temp. for greater volume. Add baking powder and vanilla. Beat until foamy. Very gradually add 2 C sugar, beating until consistency of marshmallow creme. Fold in 1 C soda cracker crumbs (make in blender fine or roll with a rolling pin). Fold in pecans. Generously grease a 9 x 13 pyrex dish including corners. it has a tendency to stick and a bit difficult to remove. Bake at 350* for 30 minutes. It should be hard and dry and cream colored. Remove from oven and let cool. Whip 1 pint of cream. Add 2 T sugar and 1 tsp vanilla. Spread over torte to very edges. Refrigerate overnight. Sauce (next day): Put raspberry Danish dessert in small sauce pan with 2 C water. Cook together stirring until smooth and transparent and thickened. Let cool slightly. Add frozen raspberries (thawed). Do not refrigerate. (Don't refrigerate or you will have jello!) When ready to serve put a cut piece of dessert on each plate and spoon some sauce over.

Blue & Gold

This year we celebrated, "The Magic of Scouting". As one of the Cub-masters for the boys, I love getting to plan fun events like these. We have so many great leaders who help make everything in our scouting program happen and I'm so thankful for all of them. The boys had fun making invitations for their families and the centerpieces. I think a "magnificent" time was had by all!

Love.
Apparently the love that Justin and I feel towards one another is evident to our children. It was the topic of dinner discussion last Friday night, where the boys had a few choice words for us about the constant PDA in our house LOL! Then Abby drew this in church today and told me that it's Justin and I. Looks like a lot of LOVE to me! Words could never adequately communicate how thankful I am to be in a loving marriage to a man that is beyond wonderful. Isaac is that age I was when my parents were divorced. I think about that all the time and give thanks that he or Ethan and Abby won't have to go through that ever. While kids act like it's gross to them for their parents to be in love, it certainly gives them the most amazing sense of safety and security. If our boys will keep looking to their father for the example of how women should be loved, they will have happy lives in store.

Favorites...
Life is good, except for the fact that I need to be sent to rehab for my Pepsi and Chocolate addiction (which I'm working on). Every day I'm reminded of how much goodness is all around. Here are some of the favorites I've been enjoying lately.....

Meet Me In St. Louie
Okay, Okay...I know it's been awhile and I've been busy. I spent last week traveling for work which brought lucky me to St. Louis. I just love this city! I had a great week at work and then finished the week off by staying with my brother and his family in the country. I spent most of my time on the couch rubbing "Chigger" the dog's belly. When I went to pack up and catch my plane, I could swear he climbed in my suitcase and asked me to take him home. It was nice to get away and see everyone but there's nothing like being home. I'm happy to get back to being a mom and wife.

Flashback Friday
To a little sweetie that loves chocolate just about as much as I do. These days we call it our "Secret Stash" or as Abby says "Our decret dash". Sometimes after a long, hard day of work and school we'll lock ourselves in my closet and surround our woes with creamy goodness followed by lots of kisses and tickles. It's all the medicine I'll ever need.
