Recipe of the Week


Pumpkin Bars

4 Eggs
1 2/3 C Sugar
1 C Vegetable Oil
1-15 Ounce Can Pumpkin
2 C Sifted Flour
2 t Baking Powder
2 t Cinnamon
1 t Salt
1 t Baking Soda

Preheat oven to 350 degrees. Using an electric mixer combine: eggs, sugar, oil & pumpkin until light and fluffy. In a separate bowl, stir together all dry ingredients. Add the dry ingredients to the pumpkin mixture and mix until smooth. Spread batter on 13x10 baking sheet (make sure to spread evenly). Bake 30 minutes and let cool. Spread cream cheese icing on top.

Cream Cheese Icing

8 Ounces Cream Cheese
1/2 C Butter
2 C Powdered Sugar
1 t Vanilla

In a mixing bowl combine cream cheese & butter until blended. Add powdered sugar and vanilla. Spread on cooled pumpkin bars.

I am a bad wife and mom and usually double the icing.
It may be bad for the body,
but it's great for the soul!
